Exploring the Rich Flavors of Hủ Tiếu Dê: A Guide to Goat Noodle Soup

Instructions:


  1. Parboil the goat meat chunks for a few minutes to remove impurities. Then rinse the meat and set aside.

  2. Char the onion and ginger until slightly blackened. This will impart a smoky flavor to the broth.

  3. In a large pot, add water, the parboiled goat meat, charred onion and ginger, crushed lemongrass, star anise, cinnamon stick, and cardamom pods. Bring to a boil, then reduce the heat to simmer. Cook until the goat meat is tender, which could take a couple of hours. Skim off any impurities that rise to the top.

  4. Season the broth to taste with fish sauce, salt, and a little sugar.

  5. Cook the Hủ Tiếu noodles as per package instructions, then rinse under cold water and drain.

  6. Place a portion of the cooked noodles into a bowl. Add the tender goat meat over the noodles.

  7. Ladle the hot broth into each bowl.

  8. Serve the Hủ Tiếu Dê with bean sprouts, herbs, lime wedges, and fresh chili on the side for garnishing.
